      <image:caption>Luis has never stopped innovating and pushing the boundaries of great wine in Bairrada. Luis innovated a three wave “precision viticulture” approach to harvesting and winemaking that has become very popular around the region. Grapes are harvested 3 times from vineyards: the first a traditional green harvesting just after fruit set, the second time at the end of August to produce sparkling wine, and finally a third time (typically around the beginning of October) for the still wines. This three tiered approach allows the winemakers of Bairrada to help the Baga vines achieve sufficient ripeness while not dropping too much fruit to the ground, instead turning what would otherwise be a waste product into some truly excellent sparkling wines, historically a very important product in Bairrada.</image:caption>

      <image:caption>Luis Pato’s Baga character starts in the vineyard. Each Baga vine is harvested three times. First a traditional green harvest right after fruit set, then a second harvest in August to make sparkling wines. Finally, a third harvest is made, typically at the beginning of October, harvesting Baga at perfect ripeness to make red wines. In the winery, the Baga is totally destemmed before fermenting in open vats. The wine is then aged in a combination of used and new French and Portuguese oak barrels for two years.       <image:caption>Portalegre, however, sits on the Serra de São Mamede, a granitic mountain near the Spanish border. Most vineyards are tiny plots that sit between 500-700 meters of elevation. The high elevations and mountainous slopes have largely protected the region from the industrial scales and methods that define most of Alentejo. Instead, Portalegre is a place that has long existed on the margins of the Portuguese wine industry, where for nearly its entire history, there hasn’t been much wine “industry” at all. Instead, Portalegre’s viticulture exists mostly on a personal scale, in which vines were planted in family gardens along with any number of other fruit, nut, and olive trees. Within these gardens, which often abutt old family homes or taverns, are collections of many of Portugal's oldest vines, many planted before phylloxera, gnarled and hunched low to the ground.</image:caption>

      <image:title>Producers - Hugo Mendes - He got a good deal on some friend’s grapes, made the wine in a friend’s winery, and pre-sold as much wine as he could over social media just so he could afford to bottle it. Since that first vintage, however, Hugo has skyrocketed to the heights of Portuguese wine culture. He has become well known for his efforts to help build up a new, younger, more dynamic Portuguese wine community and the endless creativity of his wine making. In many ways, however, Hugo is also very traditional, working almost entirely with the indigenous grapes of the region (something that is particularly rare in Lisboa), and working to preserve the region’s natural freshness in his wines, as opposed to trying to pump up the alcohol or smother their natural flavors in fancy cooperage.</image:title>

      <image:caption>Daniel faced these same issues when he sought out to start his own project, but he has joined a small group of resourceful winegrowers who are showing a new face of the region, combining the traditional grapes of Colares and those of broader Lisboa to limestone vineyards within Colares’s extreme maritime climate. While these are not the traditional wines of Colares (Daniel’s wines are labeled Lisboa VR, as Colares DOC requires that the vines be planted on their own root stock in sand), they are unmistakably of the region with their ocean perfume and sea-salt minerality. The clay and limestone soils do provide a notably Burgundian accent, however: that familiar balance of mouth coating texture and weightless acidity. Today, for the first time in living memory, the conversation around Colares is one of new plantings and exciting new wines. Baias e Enseadas is at the forefront of this conversation, and we couldn't be more excited to have it with you and your customers.</image:caption>

There are minimal sulfur additions, instead the wines rely on their phenolic quality and oxidative elevage to provide stability.       <image:caption>At the same time, AWC’s partnerships with local growers increased to the point that Paulo no longer had to contribute all of the fruit from his personal vines to AWC’s production.  Instead Paulo was able to start reserving some of his own fruit for his personal project, Insula Vinus. He took everything he had learned while at AWC, as well as his incredible fruit, and in our opinion is now making the very best wines on the island.  Many of Paulo’s vineyards are uniquely situated on the southern exposition of Mt. Pico, where fog and clouds are trapped by the mountain, shading the vines and enabling Paulo to retain more acidity than other producers–even in a warming climate.</image:caption>
